History of Fermented Foods:

In the past, the health benefits of fermented foods were unknown.  Various cultures around the world have fermented food throughout time as a means of food preservation.  However, over time the health benefits of fermentation have been discovered, and has peaked scientific interest in the field.  It has been discovered that Lactic Acid Bacteria (LAB) is able to synthesize vitamins and minerals during the fermentation process, as well as produce active peptides and enzymes that improve your gut health.  Fermented foods provide many additional health benefits such as anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity.  Scientific research is continuing to be done in an effort to further understand fermented foods and how they can help us keep our bodies healthy.
