History of Fermented Foods:
The health benefits of fermented foods have previously been unknown throughout human history. However, in recent times these benefits have been discovered. Throughout history people have been fermenting foods as a means of food preservation. As other means of preservation were discovered and invented in modern times, the health benefits of food fermentation has been lost in many areas of the world. This has led to the decrease in health of many people. With the rediscovery of food fermentation we can now begin to regain those health benefits. It has been discovered that Lactic Acid Bacteria (LAB), is able to create vitamins and minerals during the fermentation process. LAB can also produce active peptides and enzymes that improve gut health. Fermented foods provide many additional health benefits such as anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity. This has also spiked the interest in fermented foods by the scientific community. More and more research on the topic is constantly being conducted, and the the health of many people throughout the world is increasing because of it.
