History of Fermented Foods:

All throughout history, humans have been fermenting much of their food as a means of preserving them.  However, in recent times, other forms of food preservation has been invented.  This has caused the art of food fermentation to disappear in many areas of the world.  However, it has been discovered
recently that not only was food fermentation a great way to preserve food, it also provided many unknown health benefits to the consumer!  For this type of fermentation, a salt water solution is prepared.  The vegetables are fully submerged in the saltwater.  This allows the naturally occurring bacteria, Lactic Acid Bacteria (LAB), in the vegetables to work at creating many vitamins and minerals in your food.  These bacteria also produce active peptides and enzymes that improve your gut health.  Additionally, fermented foods help to increase anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity.  With the discovery of all these health benefits offered by fermented food, many people around the world are once again beginning to ferment in an effort to take advantage of these benefits.  The amazing thing is, it's not even that complicated!  Simply add your vegetables to salt water and make sure outside impurities stay outside of your ferment.  Our Perfect Pickler kits make this process even easier.
