History of Fermented Foods:
All throughout history, humans have been fermenting much of their food as a means of preserving them. However, in recent times, other forms of food preservation has been invented. This has caused the art of food fermentation to disappear in many areas of the world. However, it has been discovered
recently that not only was food fermentation a great way to preserve food, it also provided many unknown health benefits to the consumer! For this type of fermentation, a salt water solution is prepared. The vegetables are fully submerged in the saltwater. This allows the naturally occurring bacteria, Lactic Acid Bacteria (LAB), in the vegetables to work at creating many vitamins and minerals in your food. These bacteria also produce active peptides and enzymes that improve your gut health. Additionally, fermented foods help to increase anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity.
